Hi jcg,
Most likely what is happening is your Roaming Profile is overwriting the config each time the user logs in, or intermittently. This will be removing the adapter GUID from the config or modifying it to whatever is in the config in the users roaming cache on the network. If there are no configs in the network cache for this users roaming profile, it will be removing the config. I would highly recommend switching to Single Adapter Mode to relieve the adapter issue you are facing, or removing %appdata%\Viscosity from your Roaming Profiles control.
